I've talked before about how much nosotros bake in my house. It's my Zen. When I'm stressed, blistering always calms me. And allow's be honest. This is my go to recipe for cut out cookies. It'south easy and holds its shape perfectly. Best function? It doesn't need to balance in the refrigerator! Maybe I am impatient, but when I want to bake I normally decide to on a whim. I don't typically program ahead. So, if I come across a recipe that requires 2 hours in the fridge earlier I can bake it, I'll pass. This one is not bad in that it all comes together fast and easy, with an awesome cookie in the stop.

These are dandy iced, decorated, with jam, or even plain. They are a super versatile cookie. Sort of a cross betwixt a sugar cookie and a shortbread. Not too plain, not too sweet. And super cute cutting into holiday shapes similar I did with these for Valentines Solar day. I used strawberry jam, but feel free to utilize whatever flavor you lot want. I am even thinking that a chocolate ganache in place of the jam would be astonishing!

Valentine Sandwich Cookies

Ingredients

1/2 cup butter, slight softened
one egg
ane loving cup granulated carbohydrate
1 tsp vanilla
one/two tsp baking powder
2 cups flour
ane jar Strawberry jam (or desired flavour)
ane/2 cup powdered saccharide for sprinkling

Instructions

In a medium bowl, cream together butter and sugar. Add egg and vanilla, mix well, scraping sides.
In a carve up bowl, mix flour and baking pulverization.
Add together flour mix slowly one loving cup t a time, to the butter mixture. Mix well.
Preheat oven to 375 degrees. prepare a baking sail with parchment paper (or silpat sail, or cooking spray)
On a lightly floured surface, roll out dough to about 1/4 inch thick. Cut to whatever shape you choose.
Place on prepared baking canvas and bake for about 8 minutes. Cookies should not become golden brown.
Allow cool. Decorate as desired.

For Sandwich cookies:

Roll out dough to about 1/iv in thick.
Using a large heart shaped cutter, cut 24 cookies. Place 12 cookies on baking sheet and set up bated.
Using a smaller heart shaped cutter, cut out the heart of the other 12 cookies (your window cookie). Place on a baking canvas. Broil for about eight minutes. Allow cookies to absurd before assembling.
To get together your cookie sandwiches, spread nearly 2 tsp jam on whole heart cookie. This is the bottom of your sandwich. Place the window cookie on peak, creating a sandwich. You should exist able to encounter the jam in the eye.
Sprinkle with powdered sugar.

Notes

These are delicious. I ended up making 12 sandwich cookies, and using the actress dough to make a bunch of mini heart cookies that I decorated with some icing and sprinkles. These would be adorable in little bags for valentines at school, or a bunch of the minis in a jar as an easy, thoughtful gift!

We had visitor this week, and ended upwards eating all of the cookies. Oops! Darn, guess we have to make another batch this calendar week for his friends! I'll be spending my Valentine's Twenty-four hour period with my 3 boys. More than time, more than mess, more memories. I'm happy to clean up a petty sugar for that.
